Kuraga is the Russian and Central Asian name for dried apricots with the stone taken out. These are whole apricots, pitted and dried with a lemon infusion. The lemon adds a citrus note that works on the tea table, where Uzbek hosts set out dried fruit and nuts with green tea, and in cakes and pastry fillings.
