Alanga is a polished white rice with a large grain, a local variety of Khorezm, where plov is often made with it. It cooks softer than lazer and takes up plenty of water, so allow for that when measuring the liquid. After rinsing, give it 15 to 30 minutes in water, the same as any polished rice.
