Zigir is the Uzbek word for flax, and zigir oil is pressed from its seeds. In Samarkand a dark flaxseed oil is what sets the local plov apart from versions cooked elsewhere in Uzbekistan. Keep the 500 ml bottle in a cool, dark place at +5 to +18 °C, where it lasts nine months.
