Devzira is grown in the Fergana Valley, where it is the traditional rice for wedding and holiday plov. The grain is lightly milled and reddish, with a red stripe along its length. Before cooking it is rinsed 5-6 times, until the surface powder is gone and the water runs clear, then soaked for 2-3 hours in warm water. Packed in 800 g bags, six to a case, for restaurant kitchens and shops that sell Central Asian food.
