Soyaki comes from the Uzbek soyak mayiz, raisins dried in the shade: the grapes hang under a canopy or in an airy room for 30 to 40 days. Shade drying leaves the berries softer and more supple than sun drying, which makes them pleasant to eat straight from the pack as well as in plov and baking. Black raisins are the most popular kind in Uzbekistan.
