Lazer, often spelled laser, is a polished white rice with a long, slender grain, and Tashkent cooks use it for wedding plov. Its grains cook up light and separate and forgive small mistakes in the kazan. Rinse it until the water runs clear and soak it for 15 to 30 minutes before cooking.
